Re: Executive Sous Chef.

 

Please find my attached CV, as an expression of interest for the Executive Sous Chef, which I saw in website.

 

Currently, I am working at Saraya Corniche Hotel as an Executive Sous Chef. The job is responsible for maintaining the Kitchen standards of the hotel/catering.

it will include the following: Aid executive chef, oversee kitchen operations, which must be done in accordance with the organization’s standards; Update the work schedule to be assigned to each cook. Ensure junior chefs adhere strictly to recipe review program of the organization, apply on daily basis the Culinary Check List designed by the restaurant to correct any food preparation error and to monitor processes involved in such food preparation

Attach recipe review and culinary check list to culinary package for management reviews. Supervise junior chefs, relying on knowledge acquired over the years and in line with policies of the organization

Provide the all-important training to newly recruited cooks and take note of how they progress. Maintain consistency and quality in food taste in line with photos and recipes made available by the organization’s management

Communicate with the Provision section daily, ensuring perishable items are used up timely enough.

A team player with a friendly and trustworthy disposition who is always customer focused and believes that every meal should be an occasion. As someone who possesses a real passion for great food and a refusal to accept second best, he can serve as a role model to junior staff by demonstrating appropriate behaviour, towards all work-related matters. By having extensive supervisory experience in a reputable establishment, and able to flourish in a busy fast paced environment, can maintain the highest culinary standards even when under severe pressure.

Including Experience in Pre-opening Hotels, Middle East, both 4 Star and 5-star hotel service, overall having Experience and outstanding skills in kitchen as a Chef over (22) years. A versatile chef who has several cuisine specialties such as Oriental hot and cold, Continental, vegan food.
